About the St. Catherine of Siena Healthcare Center St. Catherine of Siena. St. Catherine of Siena is a DCFS 10-bed co-ed Shelter for medically fragile children (not ventilator dependent) aged birth to age 21. About the Cook Position: At Maryville, the Cook is responsible for the preparation for all food items required for our clients, staff, and visitors, and to do so in accordance with governmental guidelines. ESSENTIAL FUNCTIONS: Follows all Maryville's policies and procedures as well as all standard operating procedures for designated work sites/programs; Responsible for the preparation and serving of all food on schedule, according to the menu; Utilizes standardized recipes, portion control and ingredient controls; Maintains food costs through the use of "FIFO", food rotation, safe food handling, recording of food production amounts, and utilizing carryovers; Assists in planning nutritious, balanced and appetizing meals in accordance with governmental guidelines; Assists with food ordering and inventory; Maintain sanitation, health, and safety standards in work areas; Performs other duties as assigned.
